Key Lime Cheese Cake


  • 1 1/2 cups Crushed graham crackers

  • 1/4 cup Sugar

  • 4 tablespoons Butter


  • 3 lbs. Cream cheese (softened)

  • 3 cups Sugar

  • 9 Eggs

  • 1 tablespoon Vanilla

  • 1 package of Key Lime Blend

Garnish: Optional

  • 2 cups Toasted coconut or Slices of Key Lime



  1. Grease inside of a 10" spring form pan.

  2. Combine crust ingredients in a That's a bowl and mix well.

  3. Press mixture into bottom of pan, forming the crust.

  4. Place in a pre-heated 350oF oven for 8 minutes.

  5. Remove and cool.

  6. Place cream cheese in a mixer bowl and using the

    paddle attachment, beat cream cheese until smooth.

  7. Gradually add sugar and scrape down the sides of the bowl with a
    Silicone Spatula.

  8. Add the eggs one at a time into the creamy mixture. When all the
    eggs have been incorporated, add the vanilla, continue mixing until smooth.

  9. Stir in the Key Lime Blend.

  10. Pour mixture into the spring form pan, leaving about inch space
    from the top.

  11. Place the cake in a roasting pan and fill the pan with enough
    water so that it comes halfway up the side of the cake pan.

  12. Bake in a pre-heated 400oF oven for 20 minutes.

  13. Reduce the oven to 350oF and turn the roasting pan to ensure
    even cooking.

  14. Continue to bake for 40 minutes.

  15. Reduce the oven temperature again to 325oF and turn roasting

  16. Bake an additional 40 minutes.

  17. Remove cake from oven and cool completely.

  18. Leave cake in spring form pan, cover with plastic wrap and
    refrigerate overnight.

  19. Un-mold the cake the next day, slice and garnish with toasted
    coconut or Key lime Slices
