Simple Summer Potato Salad

2 (1lb 4oz) pkg - red potato wedges
1/2 cup chopped celery
1/2 cup chopped onion
1 cup mayonnaise
6 large hardboiled eggs, peeled
1/2 Tbsp Italian Herb Seasoning Blend
1 Tbsp Dijon Mustard (optional)


Place 1 cup water in Base of OVAL MICROWAVE COOKER; layer one package of potatoes in Shallow Colander; place second package in the Deep Colander.

Cover and microwave on HIGH for 8-10 minutes until potatoes are fork tender. Use QUICK CHEF with stainless steel blade to chop onion and celery first, then chop eggs; set aside in THATSA™ BOWL JR.

Add coooled potatoes and remaining ingredients and gently fold together using a SAUCY SILICONE SPATULA. Seal and refrigerate until serving time.
